Morning Potatoes

- when you want something tasty but not heavy

(2) Medium to Large Idaho Potatoes (that have been par boiled for about 5-minutes in a saucepan) cubed into 1/2" size
- 1-Tablespoon of Ted & Barney's Seasoning
- (1) Medium Onion, minced
- (8-10) Shitake Mushrooms, sliced
- 1/2 - Stick of butter
- 1/2 Cup of shredded sharp cheddar cheese

In a large fry pan, on a medium heat, melt the butter so that it evenly coats the bottom of the pan. I like to use my old cast-iron skillet for this recipe. If you don't have cast-iron, then be sure to use a pan with an oven-safe handle. You'll see why in a second. Preheat your oven to 375-degrees Lay in the onion and mushrooms into the pan and let them cook for about 7-8 minutes. (Time varies upon the use of a gas or electric fuel source) Next, after the onions and mushrooms are sizzling nicely, add the potatoes by folding them into the pan so that the onions and mushrooms are dispersed evenly. Now, sprinkle the Ted & Barney's Seasoning over the entire contents of the pan and stir the entire contents together.

The Potatoes will brown if you don't crowd them together, so let them cook over a medium temperature for another 12-15 Minutes, or until they have reached a tenderness or color you like. I like my potatoes a little aldente', so cook them to the tenderness you like.

Once the combination onions, mushrooms, and potatoes are to your liking, evenly sprinkle the shredded cheese over the entire pan. Now, put the pan uncovered into the oven for approximately 15-minutes, or until the cheddar cheese is bubbly melted.

Take the pan out of the oven and let stand for another 5-minutes or so and dish up and enjoy.

This recipe will serve 3-4 people; depending on how hungry they are!

(As a variation, you can add your favorite pre-cooked breakfast meat(s) before melting the cheddar cheese)
